Chinese Beef
Servings 4 Points 3
Ingredients
5 1/2 oz cooked lean beef steak 4 oz cooked rice noodles 2/3 cup fat-free beef broth 2 Tbsp soy sauce 1/2 tsp sesame oil 1 1/2 tsp cornstarch 1/2 tsp green curry paste 1 1/2 cup scallion(s) 1 1/2 cup bok choy 1 1/2 cup zucchini 2 cup snow peas 2 clove garlic clove(s) 2 tsp ginger root
Instructions
Cook noodles according to Pgk. Set aside. Combine broth, soy sauce, oil, cornstarch and curry. set aside Use a good non-stick pan to brown thinly sliced beef. Set aside. Cook ginger, garlic and sliced bulbs of scallions until fragrant. Add the rest of the veggies. Use a little water or beef broth to steam them part way. Return beef to the pan and add broth mixture. Cook until mixture thickens. Serve
Special Notes
You can use a little olive oil spray with the ginger if you're worried about sticking. If you want more 'heat' add some red pepper flakes to the broth mixture.
