One Pot Cheesy Chicken
2 4oz. skinless chicken breasts(SPRINKLED WITH GARLIC) 4 cups frozen broccoli florets 2 cups cooked white rice 1 can low sodium chicken broth 14.5oz 1 can campbells reduced fat cream of chicken soup 1 can sliced mushrooms 4oz. 8oz. velveeta light cubed salt and pepper to taste
Use at least a 2 quart pan. Boil minute rice in water for 5 minutes. Drain and set aside. Rinse pot. Add the chicken broth and bring to a boil. Place chicken breast in and cook until no longer pink about 10 minutes. Remove chicken to cutting board to chop in small pieces when cooled.
Place broccoli into the chicken broth and cook until tender. Add rice, soup,seasonings,and mushrooms. Mix well to combine all ingredients. If it is too think, add a little water.
Place the chopped chicken and velveeta cheese in the pot. Turn the fire to very low and cover to simmer. Stir every 5 minutes to get all the cheese melted throughout. Serve while hot. This make a ton of food, enough for a family of 4 to 6.
I came up with 28 points for the whole thing but i did not use the builder so if someone wants to recheck the points, feel free.
