Spicy-Mustard Chicken Breasts
1/2 cup plain low-fat yogurt 2 tablespoons spicy brown mustard 1/2 cup toasted wheat germ 1/8 teaspoon ground red pepper 1/2 teaspoon salt 4 (4-ounce) skinned, boned chicken breast halves Cooking spray
Preheat oven to 400°. Combine yogurt and mustard in a shallow dish. Combine wheat germ and pepper in a shallow dish. Sprinkle salt over both sides of chicken. Dip chicken in yogurt mixture; dredge in wheat germ mixture. Place chicken on a baking sheet coated with cooking spray. Bake at 400° for 20 minutes or until chicken is done.
