Ham Mushroom Fettucine
12 ounces fettucine uncooked 3/4 pound lean ham cubed 2 tbsp canola oil 1 med onion finely chopped 1/2 pound fresh mushrooms sliced 1 tbsp flour 1/2 tsp dried rosemary crushed 1/4 tsp pepper 1-1/4 cups FF evaporated milk 1/2 cup frozen peas 2 tbsp reduced fat sour cream
Cook fettucine according to package. In a large skillet, saute ham in oil until lightly browned. Remove and set aside Add onion to skillet saute for 4 min. Add mushrooms, saute 3 min longer. Stir in flour, rosemary, and pepper until blended.. Gradually add in milk. Bring to boil, cook and stir for 2 min or until think. Reduce heat, add peas and sour cream. Cook 2 min longer. Drain fettucine, stir in muchroom mixture; add ham heat through. YIELD 6 Nutritional info; one serving(1-1/3 cups) 334 calories, 8g fat, 29mg cholesterol. 3 g fiber, 21g protien.
