Sausage and Spinach Rolls from WW Dining for 2. Makes a total of 4 rolls. 3points each
1 tsp extra-virgin olive oil 1/2 pound low-fat Italian turkey sausage links, casings removed 1 onion chopped 1 (10 Oz.) package frozen leaf spinach, thawed and squeezed dry. 1 large egg, lightly beaten 8 (12x17-inch) sheets phyllo dough thawed according to directions
Preheat oven to 350 degrees. Spray, a baking sheet with nonstick spay and set aside.
Heat the oil in a large nonstick skillet over medium heat. Add the sausage and onion. Cook, breaking up the sausage. When done remove from heat and add spinach. Sir in the egg and mix well.
Place 1 sheet of phyllo on a work surface. (Cover remaining sheets with plastic wrap to keep moist.) Lightly spray phyl1o sheet with cooking spray. Top with 2nd sheet and spray again. Fold the 2 sheets in half making a 12x 8and 1/2inch rectangle Spread 1/4 of the mixture over the phyllo dough and roll up from one narrow end. Repeat with remaining dough. Place seam side down on baking sheet and spray again-lightly.
Bake, until golden brown, 20-25 minutes. Let cool for 5 min. before serving.
