2 Tbsp all-purpose flour 1/2 tsp table salt 1/4 tsp black pepper 1 1/2 pound boneless pork top loin chop 2 teaspoons olive oil 1 medium onion 1 cup fat-free chicken broth
Preheat oven to 350. Place one Tbsp of flour, the salt, pepper, and chops to a plastic bag. Shake well. In a heavy skillet over medium-high heat brown the chops in the oil until they're golden brown. Put them into a baking dish to fit snugly. In the same skillet saute the onion over meduim heat until soft and golden. Heat the broth. Add the remaining Tbsp of flour and stir thoroughly. Continue stirring and add the hot broth slowly. Cook about 3 minutes. Pour the sauce over the chops, cover, and bake for 20 minutes. Remove top and bake for an additional 20 minutes.
