Apple Sauerkraut Pork Cops
2 tablespoon vegetable oil 4 pork chops 2 cups drained and rinsed sauerkraut, or 1 (15 ounce) can, drained and rinsed 1/2 cup water 1 teaspoon caraway seeds 1 cup applesauce 1/4 cup chopped onion 2 tablespoons brown sugar 1/4 teaspoon ground black pepper
Heat oil in a heavy skillet over medium heat. Add pork chops to hot oil and brown on both sides. Remove pork chops; set aside. Drain off excess pan drippings. Add sauerkraut, water, and caraway seeds to the skillet, stirring well. Place pork chops on top. Combine remaining ingredients and spoon evenly over the pork chops. Cover, reduce heat, and simmer for 35 to 40 minutes, until pork chop are tender.
