Pork-u-Pine Kabobs

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tbsp soy sauce, low sodium 2 tbsp brown sugar 2 tbsp apricot jam 1 tbsp minced onions 1 tb lemon juice 1/4 tsp salt 1/8 tsp black pepper 1 pound pork tenderloin -- cut into 16 1-inch cubes 16 zucchini slices -- 1/2 inch thick 1 red peppers -- cut into 16 chunks 4 pineapple slices -- cut into 16 chunks
Mix first 7 ingredients together in a medium bowl. Add pork cubes and stir to coat. Cover and marinate in refrigerator for 1 hour.
Thread the pork, zucchini, red pepper, and pineapple alternately onto 8 metal skewers. Reserve marinade for basting kabobs.
Prepare grill. Cook kabobs for about 15 minutes, basting and turning frequently, until pork is done.
