Teriyaki Salmon
1.5 lbs salmon steaks ½ cup reduced-sodium soy sauce 2 Tbsp rice or white vinegar 1 Tbsp chopped fresh garlic 1 Tbsp ground ginger 1 ½ cups (12 oz) thawed unsweetened apple juice concentrate, undiluted ½ cup green onions, finely chopped
1. Divide salmon into six 4-oz portions. 2. Combine all remaining ingredients except green onions in blender container and blend until combined. Stir in onions. (Makes approx. 2 ¼ cups marinade) 3. Place salmon in a glass baking dish and pour the marinade over it. Marinate 10 to 24 hours in refrigerator, turning salmon occasionally to distribute marinade evenly. 4. Preheat oven to 350. Bake salmon in marinade for 8 minutes, until fish flakes easily.
