Chicken Chow Mein Servings 4 Points 4
Ingredients
2 Breasts of chicken (about 3/4 pound) 1 can fat-free chicken broth 1 medium onion, chopped 2 stalks of celery, chopped 1 cup of water 2 beef boullion cubes 1 tbsp of corn starch 2 cups of cooked brown rice
Instructions
Boil the chicken breast until cooked. Cut the chicken into small cubed pieces. Set aside.
In a deep frying pan or wok, spray the bottom with spray oil. Sautee the onions and celery until each looks clear. Add the can of chicken broth and water; bring to a boil. Add the bouillon cubes and stir until dissolved. Add cooked chicken. Once entire mixture is heated, add corn starch mixed with water to thicken the sauce.
Serve over rice.
