Festive Taco Burgers
Servings: 5 Points: 7
1 cup finely chopped tomato 1/4 cup green or red taco sauce 2 Tbs. snipped fresh cilantro or parsley 5 7-inch flour tortillas (use whole wheat for more fiber!) 1 4-ounce can diced green chile peppers, drained 1/4 cup fine dry bread crumbs 1/4 cup finely chopped green onions 2 Tbs. skim milk 1 tsp. dried oregano, crushed 1/2 tsp. ground cumin 1/4 tsp. ground black pepper 1/8 tsp. salt 1 pound extra-lean ground beef Nonstick cooking spray 1 cup shredded lettuce or red cabbage Salsa
1. In a med. bowl stir together tomato, taco sauce, and 2 Tbs. cilantro/parsley. Cover and set aside. Wrap tortillas in foil; heat in a 350 degree oven for 15 minutes. Remove from oven but do not open foil packet.
2. Meanwhile, in a large bowl combine chile peppers, bread crumbs, green onions, milk, oregano, cumin, black pepper, and salt. Add meat and mix well. Shape mixture into 5 oval patties, each 4 1/2 to 5 inches long.
3. Coat the unheated rack of a broiler pan with nonstick cooking spray. Arrange patties on broiler pan. Broil 3-4 inches from the heat for 10 to 14 minutes or until done (160 degrees), turning once halfway through broiling.
4. To serve, place some of the shredded lettuce/cabbage and a patty on each tortilla; spoon some of the tomato mixture over each patty. Wrap tortillas around patties. If desired, serve with salsa. (and maybe some fat free sour cream, yum!)
