Mexican stuffed shells
24 uncooked jumbo pasta shells 1 pound lean ground beef 2 cups salsa 1 can tomato sauce 1 cup corn 1/2 cup canned black beans rinsed and drained 1 cup reduced fat mexican or chedder cheese TOPPINGS 8 tbsp light sour cream 8 tbsp salsa 1/4 cup sliced black olives 1/4 cup asliced green onions
Cook pasta according to directions In non stick skillet cook beef over med heat drain; stir in salsa tomato sauce, corn and beans.Spoon into pasta shells. Place in a 13x2 inch baking dish coated with cooking spray. Sprinkle with cheese. Cover and bake 350 for 25-30 min until heated through. Top with sour crean, salsa olives, and onions.
Nutritional info; One serving(3 shells with 1 tbsp eash sour crean, salsa and 1-1/2 tsp onions and olives) 323 calories, 10g fat, 4g fiber. Serves 8
