Pineapple glazed banana blueberry muffins
(Better Homes and Gardens 8/05)
4 points as follows:
1-3/4 cup all purpose flour 1/3 cup brown sugar packed 2 tsp. baking powder ½ tsp. ground cinnamon ¼ tsp. salt ¾ cup mashed ripe banana ½ cup milk ¼ cup butter, melted 1 slightly beaten egg 1 tsp. vanilla ¾ cup fresh blue berries ¼ cup pineapple jam (optional)
4 points each
400 degree oven, grease 12, 2-1/2 include muffin cups; set aside.
Combine flour, sugar, b. powder, cinnamon and salt. Now in another bowl combine banana, milk, melted butter, egg and vanilla. Add this to four. Stir until just moist. Fold in blueberries.
Spoon into tins and top with a little jam. Bake 15-20 minutes.
174 calories, 5 grams fat, 29 mg. chol. 133 mg. sodium, 2 grams fiber.
I am sure these could be made even lighter with lower fat items (milk, egg beaters).
