Chocolate Zucchini Bread
1 1/4 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 c white sugar
1 1/2 c Splenda sugar substitute
1/2 c unsweetened cocoa powder
3/4 cup egg beaters
2 Tablespoons canola oil
1/2 c unsweetened applesauce
2 Tablespoons water
1 Tablespoon vanilla
2 1/2 cups zucchini, shredded (unpeeled)
1/4 cup finely chopped walnuts
Preheat oven to 350 degrees. Spray two (2) 4X8 pans with non-stick spray.
In a medium bowl, using an electric mixer set at medium speed, beat the sugars, egg sub, oil, water, applesauce, and vanilla until well blended. Stir in zucchini.
In a seperate bowl, mix together all dry ingredients. Add dry ingredients to zucchini mixture and stir just until moistened. Divide batter between the 2 pans.
Bake at 350 for 45-60 minutes, or until a toothpick inserted near the center of each loaf pan comes out clean.
Cool in pans on wire racks for 10 minutes. Remove from pans and allow to cool completely on wire rack. Makes two loaves of 12 slices each.
Now, the way I did it was I sliced one loaf into 6 slices, then cut those slices in half. It was a nice piece for so few points.
