Peanut Butter cookies:
1 cup Peanut Butter - creamy or crunchy 1 & 1/3 cup Splenda 1 large egg 1 tsp. vanilla extract.
Mix all ingredients together - except the 1/3 cup Splenda. I put the mixture in the frisge to harden for easier rolling. Roll into walnut sized drops onto a greased cookie sheet. With a fork dipped in Splenda, make criss cross designs to flatten cookie out (will not flatten otherwise). Bake at 350 for 12 minutes. 18-20 cookies are 2pts each.
