Lemon Macaroons
Yield - 24 cookies
Per cookie: Calories 61 Fat 2.1 g Fiber 0.4 g
1 1/2 cups flaked coconut 2/3 cup all-purpose flour 1/2 cup sugar 1 teaspoon lemon extract (I like to add a little more, or use almond extract instead for a different flavor) 2 egg whites, lightly beaten Cooking spray
1. Combine first 5 ingredients in a bowl; stir well.
2. For each cookie, spoon 2 level teaspoonfuls of dough onto cookie sheets coated with cooking spray. Flatten each cookie into a 1/4-inch round. Bake at 325 degrees for 24 to 26 minutes or until edges are lightly browned. Remove from cookie sheets, and let cool on wire racks.
