Crunchy Coconutt Macaroons
1 1/2 cups crisp rice cereal 1 1/4 cup flaked coconut 2 egg whites 3 tbsp sugar 1/8 tsp almond extract (I use a bit more)
in small bowl, combine all ingredients. with damp fingers, shape into 1 1/2 inch mounds on parchment paper lined baking sheets
bake at 300* for 20-25 minutes or until edges are lightly browned. put on wire racks to cool makes 2 dozen
NI (2 cookies) 76 calories,3 g fat, 0 fiber
