Pumpkin Cheesecake 12 servings – 2 POINTS per serving
24 oz non fat cream cheese ¾ cup pumpkin ½ cup sugar 1 tsp vanilla ¾ cup egg substitute ½ tsp cinnamon ¼ tsp cloves 2 tbs graham cracker crumbs 1 cup cool whip lite
Mix on high speed cream cheese, pumpkin, sugar, and vanilla. Add egg, cinnamon, and cloves. Spray 9 inch pie plate. Sprinkle w/ graham cracker crumbs. Pour cheese mix in pan. Bake at 350 for 45 min or until set but not firm. Top will crack. Spread thin layer of cool whip over top when cooled.
