Beef Barley Stove Top Dinner
1 pound extra lean ground beef 1 Cup chopped onion 1(14.5 oz) can chunky stewed tomatoes, with juice 3/4 cup uncooked barley 1(10oz) package frozen mixed vegetables salt and pepper to taste
Cook ground beef and onion in large skillet or pot, until beef is browned. Pour into colander to drain off fat. Return to skillet. Stir in tomatoes and barley. Add 3 cups water. Bring to boil; reduce heat and simmer, covered, for 30 minutes. Add vegetables; cover and simmer about 30 minutes or until vegetables are cooked through and barley is tender. If desired, add salt and pepper to taste. Makes 6 servings.
