Pasta with Ginger Tomato Sauce
6 servings at 6 POINTS per serving
1 lb pasta, any kind 1 TBS olive oil 1 large onion, chopped 2 cloves garlic, minced 2 TBS finely chopped ginger 28 oz can whole tomatoes drained and chopped 1 TBS tomato paste salt and pepper to taste 4 scallions, thinly sliced
Cook the pasta to al dente and while it is cooking, heat the oil in a medium skillet. Add the onion and ginger and cook until onion softens, about 2 minutes. Add the garlic and tomatoes and cook until the bubbling vigorously, about 4 minutes. Stir in the tomato paste , season with salt and pepper, stir in the scallions and cook about 1 minutes, Drain the pasta and toss with the sauce in a serving bowl.
