Beef and Potatoes
4 small baking potatoes 1 pound extra lean ground beef 1 1/4 cups thick n' chunky salsa 1/3 cup sliced ripe olives (optional) 1/2 cup (2oz) reduced fat cheddar cheese, shredded
Wrap each potato in foil. Bake at 450 degrees for 45 to 60 minutes or until potatoes are cooked through. About 15 minutes before potatoes are done, brown ground beef in medium skillet. Place in colander to drain off fat. Return to skillet; stir in salsa and olives. Bring to boil; reduce heat and simmer until liquid is absorbed. On each serving plate, cut a potato into quarters and arrange spoke fashion. Spoon 1/4 of meat mixture in center of potato. Sprinkle with 1/4 of the cheese. Makes 4 servings.
