Carrot Rice Pilaf 4 servings @ 3 points each
1 cup shredded carrots 1/2 cup chopped onions 1/4 cup slivered almonds 1 cup instant brown rice(uncooked) 1(14.5 oz) can FF chicken broth 1 tsp. lemon pepper Chopped fresh parsley to garnish
Spray a large nonstick skillet with nonstick spray, add carrots, onion, and almonds. Cook over medium heat,stirring constantly, until lighty browned. Add rice to mixture, mix well. Stir in broth and lemon pepper. Bring to a boil, reduce heat. Cover and let simmer until liquid is absorbed and rice is tender, about 20 minutes. Serve garnished with parley.
