Lemon Chicken Rice
1 tablespoon olive oil 1 pound boneless, skinless chicken breast -- cut into strips 1 clove garlic -- crushed 1 cup uncooked rice* 1 14 1/2 ounce can chicken broth 1 tablespoon grated lemon peel 1/2 teaspoon ground black pepper
Heat oil in large skillet over medium-high heat until hot. Add chicken and garlic; cook and stir until browned. Stir in rice and broth. Cover and cook 15 minutes or until liquid is absorbed. Stir in lemon peel and pepper.
Serve immediately.
