Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound boneless skinless chicken breast -- (cooked)
1 cup celery
1/2 cup onion(s)
2 whole hard-boiled egg(s)
1 can Great Northern beans -- (14 oz) drained
1 cup instant long grain rice
2 tsp. Old Bay Seasoning
3/4 cup lowfat mayonnaise
20 pieces potato chips
Fix long grain and wild rice mix and cook chicken in advance. (I always use leftovers of the chicken and the rice, that I have frozen.) Chop cooked chicken, celery, boiled eggs, and onion. Put all ingredients above into a large mixing bowl. Add cream of mushroom soup, can of Great Northern beans (drained), PREPARED long grain and rice mix, and Old Bay Seasoning (omit seasoning if rice or chicken were prepared with seasonings). Transfer to a 8" x 14" (approx.) baking dish, sprayed with cooking spray. Crush potato chips and top casserole with crushed chips. Bake at 350 degrees for 20-30 minutes and hot and bubbly.
