Broiled Tomato Sandwich
Servings 1 Points 3
1 Tbsp fat-free mayonnaise. 2 tsp grated Parmesan cheese. 3 Tbsp balsamic vinegar. 1 large tomato. 1/2 tsp ground oregano. 1/2 tsp horseradish sauce. 5 leaves basil. 2 slice reduced-calorie wheat bread.
Slice tomato and lay flat on a plate and pour balsamic vinegar on top. Allow to marinate while mixing mayo, 1 tsp parmesan cheese, oregano, and horseradish sauce in small bowl. Set aside. slightly toast bread in toaster. Spread mayo mixture on each slice. Place basil leaves on mixture. Add tomato slices. Top with remaining parmesan cheese and put under the broiler until hot.
Since the bread is toasted beforehand it does not get soggy and it takes less time to heat up. Be sure to put basil leaves under tomato so they don't burn. Leave the sandwich open face while broiling to heat both sides. Carefully fold together after you remove it from the oven. Messy to eat, but tastes great!
