Chicken Stuffed Pitas
All You Need 1 can (10 oz.) Hy-Vee premium chicken breast, drained 1 tsp Hy-Vee Italian seasoning 1/2 c. Hy-Vee low-fat plain yogurt 1/4 c. Hy-Vee lite salad dressing 1 c. finely chopped broccoli 2 tbsp finely chopped red onion 2 c. coarsely chopped Hy-Vee spring lettuce 1/2 c. reduced-fat shredded cheese 6 whole-wheat pita pockets
All You Do
Combine chicken and Italian seasoning in a large bowl. Add yogurt, dressing, broccoli, onion, lettuce and cheese to chicken mixture. Stir.* Place 1/2 cup of chicken mixture into each pita pocket. Serve. *Chicken mixture can be prepared a day in advance, by combining chicken, seasoning, yogurt, dressing, broccoli, onion and cheese. Do not add lettuce. Cover and refrigerate. Add lettuce just before stuffing pita. Stuff pita just prior to eating. Serves 6.
