Banana-Curry Sauce
This recipe goes with Steamed Fish with Banana-Curry Sauce
1/2 teaspoon olive oil 1/4 cup chopped Vidalia or other sweet onion 2 small ripe bananas, quartered 1 shallot, quartered 1 garlic clove, halved 1 3/4 teaspoons curry powder 3/4 cup low-salt chicken broth 1 tablespoon rice vinegar 1 1/2 teaspoons honey Dash of salt
Heat oil in a medium nonstick skillet over medium-high heat. Add onion, bananas, shallot, and garlic; sauté 2 minutes. Add curry powder, and sauté 30 seconds. Add chicken broth, and simmer 5 minutes, stirring occasionally. Place onion mixture, vinegar, honey, and salt in a blender, and process until smooth.
Yield: 1 cup (serving size: 1/4 cup)
