Brown Gravy
1/4 cup all-purpose flour 1 1/2 cups degreased turkey drippings or fat-free, less-sodium chicken broth 1/2 cup water 1/2 cup dry red wine 1/4 teaspoon ground red pepper 1/4 teaspoon black pepper
Place flour in a small bowl. Gradually add turkey drippings and water, stirring with a whisk until blended. Bring wine to a boil in a medium saucepan over medium-high heat; cook 2 minutes. Add flour mixture; cook 2 minutes or until slightly thick, stirring constantly with a whisk. Remove from heat; stir in peppers.
Yield: 8 servings (serving size: 1/4 cup)
