Mint Cereal Balls
1 tbsp reduced-calorie margarine 30 medium marshmallows 1/2 tsp mint extract 5 cups crispy rice cereal 20 pieces peppermint mints hard candy, crushed (about 1/2 cup) Butter-flavored cooking spray that is enough to coat hands
Melt margarine in a nonstick Dutch oven. Add marshmallows and cook over low-medium heat until melted, about 5 minutes; stir in extract and cereal.
Remove from heat. Stir constantly until cereal is coated with marshmallows; stir in candies.
Coat hands with cooking spray. Roll cereal mixture into 1-inch balls and place on foil-lined cookie sheet; refrigerate 2 hours or until firm
Yields 2 balls per serving. Makes 36 servings.
Use colored rice cereal if available for a festive presentation. For parties, pop each ball into a mini-muffin liner and arrange on a serving tray.
