Broccoli Cheese Soup
Servings: Approximately 10 1-cup servings Points per serving: 1
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 heads broccoli 1 onion -- chopped 42 ounces nonfat chicken broth -- 3 cans (14 oz) 14 ounces Rotel diced tomatoes with chili peppers -- 1 can 10 ounces Velveeta Light cheese
Coarse chop broccoli. Steam 5 minutes. Drain. Put in large pot with onion, chicken broth, and tomatoes. Bring to boil. Simmer 45 minutes. Mash all the veggies to make them fine. Add cheese and stir until melted.
Special Notes Rotel tomatoes are spicy. So if you like hot n spicy foods, then you'll love this soup! Rotel makes a milder version you can use. Friends have made this with just plain Hunts tomatoes and they said it was not good. If you do that, then you will need to add plenty of spices.
Makes approx 10 cups of soup -varies due to size of veggies.
