Tomato and Shredded Cabbage Soup
This soup is a snap to make, especially if you use pre-packaged shredded cabbage.
Ingredients:
1 Tbsp. extra virgin olive oil 1 small onion, chopped 1 clove garlic, minced 1 bag (8 oz.) shredded cabbage and carrots 1 can (14 oz.) diced tomatoes, drained 1 qt. fat-free, reduced sodium vegetable broth 1/2 tsp. cumin 1 Tbsp. lemon juice 1 tsp. honey Salt and freshly ground black pepper, to taste Cayenne pepper, to taste (optional) Instructions:
In soup pot or Dutch oven, heat oil over medium heat. Add onion and saute until onion begins to brown lightly, about 5 minutes, stirring frequently. Add garlic and continue to saute another minute. Add cabbage, carrots and tomatoes. Saute 3 minutes. Add broth and cumin. Bring to boil. Reduce heat to low. Cover and simmer 10 minutes. Stir in lemon juice and honey. Season to taste with salt, black pepper and cayenne pepper, if using.

Makes 6 servings.
Per serving: 74 calories, 2 g total fat (<1 g saturated fat), 13 g carbohydrates, 2 g protein, 2 g dietary fiber, 607 mg sodium.
