* Exported from MasterCook * Tuscan Bean Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 46 1/2 Ounces Canned Cannelini Beans -- (3 cans) 5 Ounces Spinach -- (bagged) 32 Ounces Chicken Broth -- crushed 3 Cloves Garlic 1/4 Teaspoon Rosemary 1 Cup Onion -- diced 2 Tablespoons Olive Oil 1 pinch thyme Heat oil in pan, add onion,rosemary,and thyme.cover and cook until onions are soft.Add garlic,cook 1 minute. Add broth and beans. bring to boil,then reduce heat and simmer 5 minutes. using slotted spoon,transfer 2 cups of beans to a bowl and set aside.Puree remaining soup in blender in 3 small batches.return soup and beans to pan.heat to a simmer and stir in spinach.
