Maple-Braised Butternut Squash Ingredients:
1 large butternut squash (13/4 to 2 lbs.) 1 Tbsp. pure maple syrup 2 tsp. melted butter 2 tsp. canola oil 1/8 tsp. cinnamon Instructions:
Pinch of salt Preheat oven to 400 degrees. Coat 8- or 9-inch baking pan with nonstick spray and set aside. Slice off tips of squash. With sharp knife, cut into quarters and remove seeds and peel. Cut each quarter into 4 pieces. Place squash in large mixing bowl. In small bowl, combine remaining ingredients. Pour half over squash and toss to coat. Transfer squash to prepared baking pan. Cover with foil and bake 30 minutes. Remove foil. Add remaining syrup mixture and gently toss. Replace foil and continue baking 20-30 minutes, until squash is tender. Before serving, drizzle with syrup and sprinkle with cinnamon.
