Green Beans with Bacon-Balsamic Vinaigrette
2 lb green beans 2 bacon slices 1/4 C minced shallots 3 T coarsely chopped almonds 2 T brown sugar 1/4 C white balsamic vinegar
Cook beans in boiling water for 2 minutes. Drain well; set aside. Cook bacon over medium-high heat until crisp. Remove bacon; crumble. Set aside. Add shallots to bacon fat in skillet; sauté 1 minute. Add almonds; sauté 1 minute. Remove skillet from heat; let cool slightly. Add sugar and vinegar to skillet; stir until sugar dissolves. Stir in crumbled bacon. Pour vinaigrette over beans, tossing gently to coat.
Makes 8 servings at 1 point each.
