French Toast Casserole
serves 8 pts 2(120 calories, 1g fat, 2.5 g fiber)
1 T maple flavoring 1 T Butter Buds 2 T brown sugar 1 loaf light bread Egg Beaters to equal 6 eggs 1 3/4 cup skim milk 1 T vanilla dash of salt 1 T cinnamon 3 T Splenda
The night before baking, spray the bottom of a 13x9x2 pan. Combine maple flavoring, Butter Buds and brown sugar and sprinkle over bottom of pan. Arrange slices of bread on the bottom of the pan. (you can cut crusts off if desired) Use the whole loaf. Mix Egg Beaters, milk, vanilla, cinnamon, salt and Splenda together. Pour over bread. Cover the entire pan with plastic wrap and put in fridge over night. The next morning, uncover and bake at 350' for 40-50 minutes. Dust with confectioners sugar if desired.
