Easy Chicken Pot Pie (one of my son's favorites!) Serves 6-8
3-4 c. cooked chicken, cut in small pieces 2 cans cream of chicken soup 2-3 cups cooked, drained frozen mixed vegetables (or 2 cans, drained) salt & pepper to taste 2 pkgs. refrigerated crescent rolls
Preheat oven to 375. Spray a 9x13 pan with cooking spray. Mix chicken, soup & veggies all together with salt & pepper to taste. Bake uncovered for 30-40 minutes until hot and bubbly.
Take out of oven and cover with unrolled crescent roll dough (I usually use about 1.5 packages, but if you like a lot of bread on top, you can arrange the remaining pieces on top of the whole thing). Return to oven and bake for another 15-20 minutes until golden.
Great way to use up leftover chicken/turkey!
